STRAWBERRY RISOTTO
Serves 4 people
AB Catering's chef is betting on a great season, working with these delicious strawberries. Check out this tasty dish! Strawberry, for example, is aphrodisiac due to its “smell, color and shape”.
Ingredients
200g of strawberry
100g of butter
1 small white onion
320g of Risotto rice
2 tablespoons of honey
1 spoon of vegetable oil
half a cup of dry white wine
50g of grated parmesan cheese
1 tablespoon of balsamic vinegar
1 litre of vegetable broth
salt as you wish
Directions
Cut the strawberries in cube shapes and put it in a frying pan with honey,50gm of butter and the balsamic vinegar. Let it boil for 2 minutes.In a pan with a thin bottom add the olive oil the chopped onion and fry it for a few minutes add the unwashed rice and fry it for a few more minutes.Add the the white wine and let all the alcohool evaporate. Then add the hot vegetable broth,little by little for another 20 minutes. Bring it out of the fire and then add the strawberry mix,the rest of the butter and the grated cheese.Add salt as you wish. Your risotto should be "al dente" and humid.
